Ingredients
1 lb. boneless chicken OR beef OR pork OR tofu
1 tbsp. olive oil
2 garlic cloves, minced
1 tbsp. minced ginger root
4 cups oriental frozen vegetables
1/2 cup chicken broth
1/4 cup peanut butter
1/4 cup soy sauce
1-2 tbsp. dried, crushed red pepper
1) Cut the chicken, beef, pork or tofu into bite sized pieces. Prepare vegetables as directed.
2) Heat the olive oil in a large nonstick skillet or wok.
3) Stir fry the chicken, beef, pork or tofu until golden brown.
4) Add vegetables and stir fry until tender crisp.
5) Combine and add, chicken broth, peanut butter, soy sauce, and red pepper.
6) Serve with spaghetti or vermicelli with chopped peanut garnish.
Makes 4 servings.
