Ingredients
2 stalks celery, finely chopped
2 medium onions, diced
2 cloves garlic, minced
2 medium carrots, diced
1 red pepper, finely chopped
1 zucchini, finely chopped
1 can (28 oz/796 mL) diced tomatoes
1 can (5 ½ oz/156 mL) tomato paste
2 tbsp (30 mL) chili powder
1 tsp (5 mL) ground cumin
1/2 tsp (2 mL) ground pepper
1/4 tsp (1 mL) cayenne pepper (optional)
2 cans (19 oz/540 mL) beans (red or white kidney beans, chickpeas, black beans)
1 cup (250 mL) frozen corn niblets
Light sour cream (optional)
Combine all ingredients in a slow cooker; stir to combine. Cover and cook on Low setting 6 to 8 hours. Spoon into individual serving bowls and top with a dollop of sour cream
Meat alternative: Add cooked ground beef, chicken or turkey chicken.
