Ingredients
3 cups (750 mL) water
1 can (19 oz/540 mL) diced tomatoes
1 package (10 oz) frozen mixed vegetables
1 medium zucchini, quartered and sliced
2 stalks celery, diced
2 medium carrots, diced
1 medium onion, diced
1/3 cup regular barley
1/2 cup (125 mL) tomato sauce
2 vegetable bouillon cubes
1/2 teaspoon dried basil
1/4 tsp dried oregano
Dash ground pepper
Combine all ingredients in slow cooker. Cover and cook on Low setting for 9 to 11 hours or cook on High setting for 4 1/2 - 5 1/2 hours.
