Sole with Tomatoes

An easy and delicious dish for one.  Serve with vegetables, rice, 
potatoes, or fresh bread.

  1   medium tomato, thickly sliced
  1   fillet of sole, about 5 oz/140 g
  1/2 tsp olive oil
  1/2 tsp lemon juice
  2 tsp chopped fresh basil, dill or parsely 
       (or 1/4 tsp/1 ml dried)
       fresh ground pepper to taste.

1)  On microwave-safe plate, arrange tomato slices in single layer. 
2)  Arrange fish to cover tomatoes; drizzle with olive oil and lemon juice. Sprinkle with basil and pepper. 
3)  Cover with vented plastic wrap; microwave
at high (100%) power for 3 minutes or until fish is almost opaque and flakes easily when tested with a fork. Remove and let stand for 1 minute. If necessary, pour off excess liquid from plate.

Makes 1 serving.
