Rotini with Fresh Tomatoes, Basil and Parmesan

450g        Rotini pasta, or ant tubular pasta
2 tbsp      vegtable oil, olive oil, or margarine
4             green onions, chopped
4             tomatoes, chopped
3             garlic cloves, minced
1 cup        cubes of cooked ham, turkey, chicken
               (optional)
1 cup        coarsely chopped fresh parsely
1/4 cup     coarsely chopped fresh basil, or 1 tsp dried
1/2 cup     grated parmesan cheese
               salt and pepper to taste

1)  In large pot of boiling water, cook pasta until tender; drain. 
2)  Meanwhile, in a large saucepan, heat oil over high heat. Add onions, tomatoes, and garlic. Cook, stirring, for 2-3 minutes or unitl tomatoes are just heated through. 
3)  Stir in pasta, meat, parsely, basil, and parmesan.  Reduce heat to medium, stir gently, for 2 minutes or until heated through. Season with salt and pepper to taste.

Makes 4 servings.
