Ingredients
1 large onion (chopped)
1 zucchini (cut in half-moons)
2 c. frozen peas and carrots
1 can canilini beans (drained and well rinsed)
2 tsp. dried oregano
1 c. orzo or other small pasta
3 cloves garlic (finely chopped)
2 tbsp. olive oil
1 carton low-sodium chicken stock ( or 4-5 c. water)
1 large can diced tomatoes
2 tsp. dried basil
Salt and pepper to taste
Saute onions, garlic and zucchini in olive oil on medium-high heat until tender (5 mins). Add all other ingredients except pasta. Simmer on medium-low heat for 20 minutes. Add pasta and continue to simmer until pasta is cooked through (8-10 minutes). Serve by topping with a sprinkle of parmesan cheese.
