Pork Tenderloin

1 piece of pork tenderloin (about 1.5 lb)
1/2 cup orange or apple juice
1 tsp. paprika
1 tsp. garlic powder
1 tsp. rosemary
1 sweet potato, cut into 1 “ cubes
2 apples, cut into slices
1 onion, diced

1.  Lightly oil loaf pan.
2.  Season tenderloin with spices.
3.  Place tenderloin in loaf pan and add juice.
4.  Toss cut up vegetables and apple around
     the pork in the loaf pan.
5.  Bake at 350 F for 20 minutes; turn over
     tenderloin and cook for another 20
     minutes. 
6.  Slice pork and serve with vegetable mixture
     sauce on top.
 

Serve with rice and green salad.

Serves 4 persons.
