Pasta with Vegetable Alfredo

Ingredients

1 cup broccoli florets
1 cup carrots, sliced thinly
1 cup mushrooms, sliced thinly
1-2 cloves garlic, minced
1 tbsp. margarine
1 cup evaporated milk
1 2/3 cup cottage cheese, puréed until smooth
1 egg
¼ cup parsley, chopped
1 cup parmesan cheese, grated
Ground pepper to taste
Cooked pasta

1. Steam broccoli and carrots until tender but still crisp.
2. Sauté mushrooms and garlic in ½ tbsp margarine until tender. Set veggies aside.
3. Melt ½ tbsp. margarine, add milk and heat do not boil.
4. Purée the cottage cheese with egg; add to milk mixture.
5. Add parsley, cheese, vegetables, garlic and ground pepper to mixture.
6. Heat on medium stirring constantly until sauce is heated through but do not boil.
7. Serve over your favourite pasta. 

Serves 4 people.
