Mini Meatloaves

Children love anything "mini"!

Ingredients
1.5 lb. lean ground beef
1 egg, beaten
1/2 cup grated carrot
1 small onion, grated
1/4 cup dry bread crumbs
1 tsp. dried oregano
1/4 tsp. pepper
1/2 cup pizza sauce

Quick Vegetable Sauce
1 tsp. olive oil
1 cup each diced sweet red pepper and zucchini
2/3 cup pizza sauce

1.  Preheat oven to 375°F.

2. Combine beef, egg, carrot, onion, bread crumbs, oregano, pepper and 1/4 cup pizza sauce.

3.  Divide mixture among 12 lightly oiled muffin tins, pressing into cups. Spoon remaining pizza sauce on top of each loaf.

4. Bake in 375°F oven for 25 to 30 minutes or until meat thermometer reads 160°F.

5.  Prepare Quick Vegetable Sauce while meat loaf is cooking.  In skillet, heat oil and add red pepper and zucchini; cook, stirring occasionally, until softened.  Add pizza sauce and heat through.

Serves 4-6.
