Ingredients
1 cup green or brown lentils, washed
2/3 cup onion, chopped
1/4 cup almonds, slivered
1/4 cup oil
6 cups long grain rice, cooked
1/2 cup raisins
1) Cook lentils 30 minutes in 4 cups of water. Drain.
2) Sauté onions and almonds in oil until lightly browned, stirring a few minutes.
3) Add lentil mixture to hot rice and raisins.
4) Top with chopped peanuts, shredded coconut and more raisins and garnish with parsley if desired.
Makes 6 servings.
