Fish Mediterranean

This fish is delicious served with rice and cooked vegetables.
 

1 lb. sole, haddock, red snapper or other fillets

Sauce
1/2 tsp. olive oil
1 tbsp. chopped green onions
1 clove minced garlic
3/4 cup drained, diced, canned tomatoes
1/2 tsp. dried basil
black pepper

1.  In a skillet of gently simmering water about 1" deep, cover and poach fish over medium heat for 5 minutes or until fish is opaque.  Drain well; transfer to platter and keep warm.

2.  Sauce: Meanwhile, in a small saucepan, heat oil over medium heat; cook onion and garlic for 2 minutes. Add tomatoes and basil; simmer for 3 minutes, stirring occasionally. 
Stir in olive and black pepper to taste. Spoon sauce over fish.

Serves 4.
