Fettucinni with Fresh Vegetables

Ingredients:

  • 3 cloves Garlic ( minced )
  • 1 small Onion chopped fine
  • 1 tbl margarine
  • Fresh crushed black pepper
  • Parmesan Cheese
  • Fettuccine
  • Fresh Chopped tomatoes
  • Spinach
  • Peppers
  • Basil Pesto

Method:

  • In a large pot, bring water, a little oil and a little saltĀ  to a boil.
  • In a large frying pan sweat onions and garlic with a little margarine.
  • Add chopped tomatoes and peppers.
  • Cook pasta until it reaches the al dente stage.
  • Drain pasta and toss into the frying pan.
  • Add spinach and mix together.
  • Add fresh herbs.
  • Top with parmesan cheese.
