Fettucinni with Fresh Vegetables
Ingredients:
- 3 cloves Garlic ( minced )
- 1 small Onion chopped fine
- 1 tbl margarine
- Fresh crushed black pepper
- Parmesan Cheese
- Fettuccine
- Fresh Chopped tomatoes
- Spinach
- Peppers
- Basil Pesto
Method:
- In a large pot, bring water, a little oil and a little saltĀ to a boil.
- In a large frying pan sweat onions and garlic with a little margarine.
- Add chopped tomatoes and peppers.
- Cook pasta until it reaches the al dente stage.
- Drain pasta and toss into the frying pan.
- Add spinach and mix together.
- Add fresh herbs.
- Top with parmesan cheese.
