Easy Vegetable Beef Soup

Ingredients

1 lb. extra lean ground beef
4-6 c. low-sodium beef stock
1 tbsp. olive oil
2 large potatoes (chopped)
2 c. V-8 juice
1 tsp. dried thyme
3 c. frozen mixed vegetables
1 onion (chopped)
3 cloves garlic (chopped)
1 tsp. dried oregano
salt and pepper to taste

In bottom of large stock pot, brown beef on medium-high heat for 5-7 minutes.  Once beef is browned, drain off excess fat and add back to pot.  Add onions, garlic and potatoes and cook for 3-5 minutes.  Add stock, frozen vegetables, V-8, dried spices, salt and pepper.  Bring to a boil and turn down to simmer (medium heat).  Simmer for 20 minutes or until potatoes are cooked through.
