Chicken Fingers and Fries

Ingredients

1 cup dried breadcrumbs
1/2 tsp. garlic powder
4 single chicken breasts
1/2 cup plain yogurt

1. Preheat oven to 425 F.
2. Lightly grease a cookie sheet. 
3. Combine the breadcrumbs and garlic by shaking in a clean plastic bag.
4. Cut chicken strips into 3" by 1" strips. 
5. Dip the chicken strips in yogurt. Shake off excess yogurt. Place the chicken strips in the plastic bag and shake with breadcrumbs.
6. Place the chicken strips on the cookie sheet. Bake for 20 minutes, or until the juices run clear when chicken is pierced with a fork.
 

Home made French Fries

4 large potatoes
2 tsp. vegetable oil
salt

1. Cut potatoes into strips 1/2" thick. Rinse, drain and place in a large bowl. 
2. Add the oil and toss until coated. 
3. Spread in a single layer on a cookie sheet. Bake in the oven (at 425 F) until crisp and brown - about 20 minutes. Turn the chips half way through the baking.  Sprinkle lightly with salt.

Note:  This recipe is also great using sweet potatoes or parsnips. You can also use paprika, garlic or onion powder for seasoning after baking.
