Black Bean Salad

Delicious in the summer - served with cornmeal muffin and tossed greens.

Ingredients

Dressing
4 tbsp. fresh lime juice
3/4 tsp. cumin
3/4 tsp. chili powder
3/4 tsp. salt
1/2 cup vegetable oil
 

1. In a bowl, stir together all ingredients.

Salad
1 can of black beans
1 1/2 cup chopped, seeded tomato
1 1/2 cup thawed frozen corn kernels
3/4 cup thinly sliced onion

1.  Drain and rinse beans. Combine all of the ingredients in a large bowl and toss with the dressing.
