Beet and Lentil Salad

Ingredients
½ cup Dried lentils
1 ½ cup  Water
4 Beets
1 medium Onion ( sliced)
2 tbl vinegar

Dressing
2 tbl white wine vinegar
¼ tsp ground cumin
4 tbl olive oil
Salt and pepper to taste
¼ cup chopped parsley

Optional
Try adding

  • crumbled feta or goat cheese
  • diced apples
  • Raisins
  • Grapes

Method

Place lentils in water and bring to a boil. Turn down to a simmer and continue to cook until tender, drain and place into a medium sized bowl.

Meanwhile wash beets and place in a water and vinegar and bring to a boil. Let simmer until you can pierce with a fork. Drain  and let the beets cool. With a paring knife remove the core and the skin of the beet. Chop the beet into bite size pieces. Add beets to the lentils.

Add sliced onions

In a separate bowl prepare dressing. Add dressing to the salad and toss.

Add optional ingredients to the salad for a kicked up texture and taste.
