Easy Beef Stew

Ingredients

1 lb stewing beef, trimmed of visible fat
1 medium onion, diced
4 cups of chopped, mixed vegetables (potatoes, carrots, rutabaga, turnip, sweet potato, green beans)*
2 cups V-8 juice or other 100% vegetable juice (approximately since amount needed depends on the size of your slow cooker )

Brown stewing beef.  Place in slow cooker.  Top with chopped vegetables.  Add vegetable juice to the level that you can see juice through ingredients in slow cooker.  Cook on High for 2-3 hours or Low for 6 hours. 

*Note:  frozen vegetable ‘stew mix’ work well.
